The Stand:

Our beer is brewed on a Single Tier All Grain System.  The frame is made from 1 1/2" square steel tubing, 1/8" thick.  We decided to go with such a heavy weight steel which will allow us to upsize the brewery and still use the same frame.  In fact, to upsize the brewery would only require the purchase of larger pots.  There are three burners, each using high pressure propane.  The burners for the HLT and BK (see below) are 210,000 btu's, while the MLT burner is 50,000 btu.

The Pots:
Our all grain brewing system uses a total of three commercial grade pots.  The pots are the Hot Liquor Tank (HLT), the Mash Lauter Tun (MLT) and the Brew Kettle (BK).  The HLT, which heats the water to pour over the grains, is a 20 gallon pot.  The MLT, which holds the grain as the sugars are extracted, is a 25 gallon pot.  And finally, the BK is a 30 gallon pot.

The Fermenter:
This is where the true magic happens, yeast turning sugar into alcohol.  We use two different types of vessels for fermenting.  For smaller batches, 6 1/2 gallon glass carboys are used.  Smaller batches are usually made for testing and perfecting new recipes.  For the larger batches, we use a Blichmann 27 gallon stainless steel conical fermenter.  The conical fermenter gives us many more abilities.  The main advantage is it allows us to harvest yeast from a current batch and use it on a future batch.  This gives us the ability to produce a much more consistant product, as flavors often differ widely depending on the type of yeast used.

The liquids are transfered between the pots and the fermenters by the use dual March 809 pumps, giving us a completely controllable and sealed transfer system.  When transferring from the conical fermenter, CO2 gas is used to pressurize the conical and force to beer to its destination, whether a keg or a bottle.  Having a sealed system separates the beer from outside air, which can impart off flavors.  This is not always a bad thing, but once again it allows us to produce a consistent and delicious beer.

The 207 Brewery is small in comparison to most Micro Brewery companies.  At full production, we only create a maximum batch size of 20 gallons, and we can do this four times a month.  This only outputs a little over (5) 15 gallon kegs, or (16) soda type kegs (most common), or (200) 12 ounce bottles.  We actually try not to brew at full capacity so we can meet the demands and requests of the customers.  Sometimes we get a special order for a unique beer, and in this case we can immediately create the new batch without having to wait for a scheduling opening.  The total time from the order being placed to the order being delivered is 3-6 weeks, depending on the type of beer.
