I hope you weren't hoping for our secret recipes!  While you will not find our recipes on here, you will find the general ingredients used to produce our beer.  Keep in mind that we adhere strictly to the German Purity Law, which allows only the use of barley, hops, yeast and water.  Grain (barley) is what gives a beer its main flavor.

The Barley:

This is a secret, sorry.


The Hops:

Hops give a beer its aroma and bitterness.  This is what notice most when you breath in a beers aroma.  Some hops are added for the entire boiling process.  When used this way, more of the hop is utilized as flavor (bitter, but in a good way).  The later the hops are added in the boil, the more the hop will be utilized as aroma.  All of our recipes use at least two different hop additions, while some use up to four.

The Yeast:

The yeast is what turns our wort (pronounced wert) into our final alcoholic beverage.  We only make ales.  From a creation point of view, ales are fermented at a warmer temperature than lagers, and are top fermenting instead of bottom fermenting like lagers.  Whether to ale or lager is a personal preference.  Now, I can't tell you the exact yeast used,  since it is a trade secret (different yeasts produce different flavors).  I can tell you that our yeast is usually harvested from batch to batch, allowing us to 'reuse' our specific yeast to create a consistent beer.

The Water:

Our water is unfiltered town water (Bethel, Maine).  We are very lucky in that our local water has the perfect clarity and minerals (or lack there of).  Most brewers have to filter their water, while we can use our natural, which gives our beer a very distinct and natural flavor.
